Midweek brunch: Spiced apple pancakes

I must admit that the inspiration for this recipe came from a candle: an apple and cinnamon candle to be exact. 

My auntie just started making her own soy wax candles and one of my favourite scents is 'apple and cinnamon' (as pictured) which inspired me to make these spiced apple pancakes on a cold autumn morning.

Usually I never measure my ingredients, I just chuck everything in and hope for the best - is it just me who does that? However, for the purposes of this post, I tried to measure out the ingredients the best I could (I don't own scales, so just used a cup): 

What you will need (for 2/3 servings):

- 1 and a half cups of milk
- 1 cup of plain flour 
- 1 egg
- Cinnamon, nutmeg and castor sugar
- 3-4 apples 
- Butter for frying 
- Yogurt (optional, to have on the side)


1) Preheat the oven to 200°C/400°F 
2) Chop the apples into small slices, add to a baking dish, sprinkle with cinnamon and sugar and put in the preheated oven whilst you make the pancakes (20 mins until golden). 

3) Start making the batter: add the cup of milk, flour and the egg into a large mixing bowl and whisk together. Preheat a pan on the hob with a small knob of butter. 

4) Add a teaspoonful of cinnamon powder and grate half a nutmeg into the batter (add more/less depending on how you like it) 

5) Fry the pancakes in a non-stick frying pan as you usually would and stack on a plate to keep warm - you should get 5-6 pancakes from the mix. Once done, remove the apple slices from the oven and serve with a warm pot of tea.  

Other great things to serve them with is: extra sugar, cinnamon or yogurt. The yogurt we had was the Yeo Valley Toffee Apple yogurt, it is limited edition, but if you can get hold of it, it is perfect with the baked apple.
